Now’s your chance with this invitation to our White Truffle Chef’s Table. Join Olio’s award-winning Sicilian chef Lino Sauro as he celebrates one of the rarest, and most expensive, delicacies in the world over a five-course degustation, served with matched wines selected by Olio’s sommelier. There are very limited spots available for this intimate dinner on Wednesday, 27 November for just $280 pp. Called the ‘Truffle of the White Madonna’, this delicacy is found only in Italy’s Northern and central regions, particularly Alba and Piedmont. Far superior to the black truffle, the white truffle is by far the most precious of all truffles, its flavour formed by the unique natural environment in one of Italy’s most treasured culinary areas. With its prized earthy flavour, the white truffle’s subtle and complex aroma is honoured in this degustation with classic pairings such as sea urchin, Iberico pork, and handmade ravioli.
