Four Hands | Lino Sauro and Seita Nakahara |
When: |
The 'Four Hands' experience will see a succession of visiting chefs sharing the helm at Kensington Street's The Private Kitchen ( POP UP), The Old Rum Store, culminating in a private feast to celebrate the fruits of their collaboration for a few lucky guests. The residency will be led by our very own Chef Lino Sauro of Olio Kensington Street and Gattopardo, Singapore.
Sauro's talent is recognised widely, with numerous accolades to his name. In 2016, the World Gourmet Summit Awards of Excellence honoured Sauro with the Chefs Choice Award. In the same year, Sauro was inducted into the WSQ Mentor Chef Hall of Fame. Sauro has cooked for actress Sophia Loren and the Prime Minister of Singapore, Lee Hsien Loong, to name but a few. The 'Four Hands' series kicks off with Chef Seita Nakahara's residency. Chef Nakahara hails from Tokyo, but spent his formative years in Singapore, where he began his lifelong passion for Italian food. Seita is Head Chef of Michelin starred restaurant terra - meaning 'earth' in Italian. Seita likes to say that his philosophy brings a twist to traditional expectations; he calls it 'Tokyo-Italian' cuisine. 'Olio Kensington Street Review' Terry Durack, Good Food, Australia "Not yet sure where chef Sauro sits on the traditional-versus-modern spectrum, I test him by ordering the most Sicilian-sounding dish on the list, pasta con le sarde of bucatini with sardines... It's wonderfully mulchy with wild fennel, saffron, raisins and pinenuts, bringing together that boatload of influences that make Sicilian food both moreish and Moorish." You don't expect much from the carpaccio of the day at first, until you bite on the salmon roe pearls that adorn the thick slices of sea bream sashimi - unleashing a spurt of brininess to flavour the fish."
